Vietnamese rice dishes, and why the broken rice is the good one

On this page
Vietnam has a noodle reputation and a rice diet. The bowls travel better, but the plates are what most of the country actually eats at midday.
What are the main Vietnamese rice dishes?
Four cover most of it. Com tam is broken rice with grilled pork. Com ga is chicken rice cooked in its own stock. Com binh dan is the point-and-choose rice-plate lunch on every working street. Com chien is fried rice, the least interesting of the four and the most often ordered by visitors.
Between them these Vietnamese rice dishes feed more people daily than pho does, and none of them requires a translated menu to order.
| Dish | What it is | Price | Where |
|---|---|---|---|
| Com tam | Broken rice, grilled pork, egg | 35-60k dong | Saigon, best at breakfast |
| Com ga | Chicken poached, rice in the stock | 40-70k dong | Hoi An and the centre |
| Com binh dan | Point at two or three dishes | 35-55k dong | Everywhere, lunchtime |
| Com chien | Fried rice, egg or seafood | 50-80k dong | Everywhere, all day |
| Com nieu | Rice baked in a clay pot | 80-150k dong | Restaurants, shared |

What is com tam, and why broken rice?
Com tam is a plate of broken rice topped with grilled pork, usually a fried egg, shredded pickled vegetables and a sweet, thin fish sauce poured over the lot. The rice is the fractured grain that milling leaves behind.
Broken grains were once the cheap by-product for people who could not afford whole rice. They are now the reason the dish works: broken grains are softer, they clump less, and they hold the sauce in a way whole rice does not. Ordinary rice makes a worse com tam.
Ho Chi Minh City is where it belongs, and morning is when to eat it. The com tam page goes through the full plate and how to order the version you want. The Saigon page covers the districts where the good stalls are, and the breakfast guide explains why the best version of almost anything here is a morning one.
What is com binh dan, and why should you use it?
Com binh dan is the everyday rice shop: a glass counter holding ten or fifteen dishes already cooked, from which you point at two or three. They land over rice with a bowl of clear broth beside them.
Com binh dan is the single best value in Vietnamese eating, and the fastest way to try home cooking rather than restaurant cooking. Braised pork with eggs, fried fish, a sour soup, water spinach with garlic, stuffed tofu — these are dishes that rarely appear on a translated menu.
You do not need any Vietnamese to eat at one. Point, nod, sit down. The bill is usually 35,000 to 55,000 dong, about 1.30 to 2.10 US dollars at mid-2026 rates of roughly 26,000 dong to the dollar.
Where is the best com ga?
Hoi An, where com ga is a genuine local speciality rather than a dish that happens to be sold. The kitchen poaches and shreds the chicken rather than roasting it, cooks the rice in the resulting stock until it turns yellow, and puts a herb and onion salad on top.
Tam Ky, further down the coast in the same province, makes a competing claim and is worth a stop if you are passing. Elsewhere in the country com ga is fine and unremarkable, which is worth knowing before you order it in Hanoi and wonder what the fuss is.
What do these dishes cost?
Around 35,000 to 60,000 dong for com tam or a rice-plate lunch at a local place. Com ga runs a little higher at 40,000 to 70,000, and com nieu, the clay-pot rice built for a table to share, sits at 80,000 to 150,000.
Sticky rice is cheaper again and belongs to the morning rather than to lunch, which the xoi guide covers. A restaurant with English menus and photographs charges two to three times those numbers for the same plate. The trip cost guide puts daily eating in context, and the short version is that rice plates are where a food budget goes furthest.
Can you eat them vegetarian?
Yes, and com binh dan is where it is easiest. A rice-shop counter almost always has two or three vegetable dishes, and pointing at only those is normal.
The usual caveat applies and it is not a small one. Kitchens here frequently cook vegetables with fish sauce or shrimp paste, even when nothing visible in the dish is animal. The vegetarian guide covers how to ask, and chay restaurants remove the question entirely.
When should you eat rice rather than noodles?
At midday, mostly. The noodle soups are morning food and largely gone by ten, while the rice shops open for lunch and run into the afternoon. Ordering pho at two in the afternoon usually means eating the second-best version of it.
Com tam is the exception that runs the other way: a breakfast dish in Saigon, off grills that light before dawn. The what to eat guide sets out which city is worth eating what in.
FAQ
What is com tam?
Com tam is broken rice, served with grilled pork, a fried egg, pickles and a sweet fish sauce. The grains are the fractured ones left by milling, once sold cheap and now the point of the dish because they hold sauce better than whole rice. It is a Saigon speciality and the classic breakfast there.
What are the main Vietnamese rice dishes?
Com tam, the broken-rice plate with grilled pork; com ga, chicken rice cooked in the stock; com binh dan, the point-and-choose rice-plate lunch found everywhere; and com chien, fried rice. Between them they feed more of the country day to day than the noodle soups do.
How much does a rice dish cost in Vietnam?
About 35,000 to 60,000 dong for com tam or a rice-plate lunch at a local place, which is roughly 1.30 to 2.30 US dollars at mid-2026 rates. A tourist-facing restaurant charges two to three times that for the same plate.
What is com binh dan?
The everyday rice-plate lunch: a counter of ten or fifteen prepared dishes behind glass, from which you point at two or three to be served over rice with a bowl of broth. It is what most Vietnamese people eat at midday, it is cheap, and it is the fastest way to try a lot of home cooking.
Where is the best com ga in Vietnam?
Hoi An, where com ga is a local speciality made with shredded poached chicken, turmeric-yellow rice cooked in the stock, and a herb salad on top. Tam Ky in Quang Nam province makes a similar claim. The dish exists nationwide but the central coast is where it is taken seriously.
When is com tam eaten in Vietnam?
Traditionally at breakfast, and in Ho Chi Minh City that is still when the best stalls sell it. Many now serve it all day, but the morning plates come off a grill that has just been lit rather than one that has been running since dawn.
